This time, it’s for good: winter is coming. With such a cold weather, when we have to cook, it is hard to think about something else than warming and comforting dishes. So this romanesco cabbage salad recipe might seem unexpected! When it’s cold, our immune system is weaker. Since raw ailments contain many vitamins and antioxidants, we should continue to eat them.
As many people, I got a cold lately. Hence I decided to eat more fruits and raw food. With its beautiful colors, this salad will make you forget about the gloomy whether and will fill you up with a whole stock of vitamin C. The grinded cabbage texture will inevitably make you think of couscous semolina, but in a crunchier way. For those who like sweet-sour salads, here is a very easy and crispy recipe!
Romanesco Cabbage ‘Couscous’ Salad with Orange
½ Romanesco cabbage
2 oranges (including ½ for the dressing)
½ pomegranate, seeded
Juice of ½ orange
3 tbsp argan oil
½ tsp cinnamon
Grind the cabbage in a food processor. Peel the orange and the avocados; cut them into pieces.
Prepare the dressing, pour over and mix with the salad, just before serving.
