As a food blogger I often wonder where to find the inspiration. For many of us, inspiration comes with encountering new cuisines, travelling, reading articles, books or even other food blogs. I must admit, I am always looking for new ideas on Pinterest.
Mixing quinoa, pistachio and dates…the idea came to me from a friend. She reads many recipes on several US blogs and magazines. And I immediately found the idea fantastic! Of course, I added my personal touch and made my own vinaigrette. But talking with this friend made me realize that we always borrow ideas from others, add things, remove others and finally create “our style”. This is the process of creating. And when it comes to cooking at least, it is perfectly normal.
Surprisingly enough, this very idea of combining quinoa, dates and pistachio, - even if it was on a US magazine recipe - is originally inspired by a Moroccan dessert that is called Seffa. Seffa is a kind of sweet couscous where semolina, dried fruits and nuts are mixed. I wrote a Seffa recipe few months ago, you can find it here. Lien Seffa
I revisited this salad recipe to add some raspberries in it. In fact, I find that they bring a slightly acidulous taste that softens the strong sweet taste of the dates.
The slightly peppered taste of the sprouts and the vinaigrette made of grapefruit ends up balancing this salad. The bright colors of this salad will surely put you in a good mood! Enjoy!
Quinoa Pistachio Raspberry Salad
100 g / 3.5 oz sprout mix (beetroot leaves, spinach and arugula)
100 g / 3.5 oz quinoa
60 g / 2 oz pistachio
5-7 dates, finely chopped
2 tbsp argan oil
Juice of ½ grapefruit
Pour all the ingredients in a salad bowl. Mix carefully in order not to mash the raspberries
In a blender, pour all ingredients of the vinaigrette. Blend.
Pour over the salad, just before serving.
