Figs. To me, there is no better fruit on earth… I have always loved it, and I love it more and more, summer after summer. I was wondering why this fruit was my favorite above all the others. Everything made sense when I saw this documentary called « Fig, the Fruit of Paradise»! There, I learned that figs were one of the oldest farmings, very much appreciated since Antiquity and the first fruit quoted in the Old Testament…
Figs are really typical of the Mediterranean ‘terroir’. To me, it represents the best of what Mediterranean cuisine offers in terms of simple, natural and authentic tastes.
It was one of these evenings when I didn’t have time to cook… But I had the opportunity to go to the market earlier and buy these beautiful blue figs. Therefore, I prepared very quickly this salad (you could even call it a fruit salad!) with figs, cucumber, tomatoes and mint. All Moroccan flavors…
Sunflower seeds and aronia berries* gave this salad an interesting twist. Aronia is a superfruit form North America, rich in antioxidants. Its slight bitterness balances the very sweet taste in the salad. I chose a seasoning with olive oil only in order to respect all the flavors in the salad.
Vegan, grain free, super healthy. This Salad is to be eaten without moderation!!!
Late Summer Salad with Figs and Mint
Serves 2, as main dish
2 tomatoes, sliced
8-10 figs, cut into quarters
1 small cucumber or ½ cucumber, sliced
A dozen mint leaves, whole
1 handful aronia berries*
30 g sunflower seeds
2 à 3 tbsp olive oilSalt
In a salad bowl, pour all the ingredients. I recommend keeping the mint leaves whole. Mix gently. Serve immediately :)
