At the moment, I have little time for cooking or even going to the market to seek for new products, and recipe inspiration. Usually, when I lack time, I just prepare salads, varying vegetables, grains and nuts. I also like adding fruits in it. Maybe I overindulged myself in it so now, I feel tired of eating salads… Then I remembered that smoothies could be an excellent alternative! In fact, when they are nourishing enough, smoothies could be perfect for breakfast or even for lunch.
This smoothie made of coconut milk and topped with walnut and cocoa beans is the perfect energy booster! I haven’t found a better way to start a busy day yet!
However, if you make it a bit heavier (using more banana or dates) and put it in the fridge afterwards you will obtain a mousse texture. Then you could even serve it as a dessert!
You will certainly enjoy the contrast between the creamy texture and the crunch of walnuts and cocoa beans. And most of all, you will feel energized!
Energy Boosting Smoothie with Cocoa Beans
400 ml / 13 fl oz. coconut milk (or almond milk)
1 pinch of cinnamon
4 ice cubes (optional)
12-15 cocoa beans
Pour the milk, the banana, dates and cinnamon (and ice cubes) in a blender. Blend.
Crush the walnuts and the cocoa beans in a mortar. Pour the drink in glasses; add the walnuts and the cocoa beans crushed on top.
